This mobile hot cupboard with a wet heat bain marie top suits school canteens, care homes and event catering serving large numbers of hot meals. The top takes 4 x 1/1 GN pans up to 150mm deep and the cupboard below holds up to 90 plated meals.
Installation and Connection
The servery is supplied with two 13A plugs powering a 4.2kW heating system, so it runs from two standard sockets without hardwiring. One supplies the wet heat well and the other the heated gantry. It measures H143 x W150 x D69cm, weighs 113kg and moves on four swivel castors, two of them braked.
Day-to-Day Use and Cleaning
Adjustable thermostats run from 30°C to 110°C, with high-limit safety cut-outs to prevent overheating or dry-running. The control panel has on/off switches and separate power and heating indicators. The top gantry has insulated heating elements with front and side glass for front-of-house display. The stainless steel surfaces wipe clean after service.
