Spiral or Planetary Mixer?

Planetary mixer

Choose by what you mix

Spiral mixers turn the bowl and a spiral hook together. They are built for dough, kneading heavy bread and pizza dough gently without overheating it. If dough is your main job, choose spiral.

Planetary mixers move a beater, whisk or hook around a fixed bowl. They are the all-rounder, for cake mix, cream, mashed potato, meringue and lighter dough.

Sizing tip: spiral mixers are often listed by bowl size in litres and by how much dough they handle in kilograms. Use the dough figure to choose.

Safety and hygiene with food prep machines

  • Train staff before they use slicers, mincers and veg prep machines, and keep guards in place.
  • Unplug machines before cleaning, and clean blades and discs after every use.
  • Use separate equipment, or clean thoroughly between uses, for raw and ready-to-eat food.
  • Check the power source: most countertop machines plug into a 13 amp socket, but large mixers may need a hard-wired supply.

Frequently Asked Questions

What size spiral mixer do I need?

Work out the most dough you make in one batch, then choose a mixer rated for at least that dough weight. Bowl size alone can be misleading.

Is a food processor the same as a veg prep machine?

A food processor chops, mixes and purées in a bowl. A veg prep machine pushes food through discs to slice, grate or dice, and can feed straight into a container. Some models combine both.

What blade size meat slicer should I get?

Smaller blades of around 195mm to 250mm suit light use and smaller products. Larger 300mm to 350mm blades handle bigger joints and heavier daily use.

Can I use a stick blender in a hot pan?

Yes, commercial stick blenders are designed to blend soups and sauces in the pan. Choose a shaft long enough for the depth of your pans.
